Stir-Fried Fresh Shiitake Mushrooms with Pork Slices平菇炒肉片

Ingredients
- Fresh shiitake mushrooms: 20 pieces
- Pork: 100 g
- Light soy sauce: 1 tablespoon
- Oyster sauce: 1 tablespoon
- Cooking oil: 3 tablespoons
- Spring onion: about half a stalk
- Cornstarch: 2 tablespoons

Instructions
- Prepare the shiitake mushrooms: Wash the mushrooms thoroughly and slice them.
- Chop the spring onion: Finely chop the spring onion.
- Marinate the pork: Slice the pork thinly and mix it with 1/2 tablespoon of light soy sauce and 1 tablespoon of cornstarch. Let it marinate for 15 minutes.
- Prepare cornstarch slurry: Mix 1 tablespoon of cornstarch with a small bowl of water until smooth. Set aside.
- Stir-frying
- Heat oil in a pan. Add the chopped spring onion and stir-fry until fragrant.
- Add the marinated pork slices and stir-fry until just cooked through. Pour in 1 tablespoon of light soy sauce and mix well.
- Add the sliced shiitake mushrooms and continue stir-frying.
- Season and thicken
- Just before removing from the heat, add 1 tablespoon of oyster sauce and mix well.
- Finally, pour in the prepared cornstarch slurry and stir until the sauce thickens.
- Serve
