Braised Prawns in Oil 油焖大虾

Ingredients
- Prawns: 500 g
- Scallion: 1 stalk
- Ginger: 2 slices
- Garlic: 5–6 cloves
- Light soy sauce: 2 tbsp
- Cooking wine: 1 tbsp
- Dark soy sauce: ½ tbsp
- Oyster sauce: 1 tbsp
- White vinegar: ½ tbsp
- Tomato ketchup: 1 tbsp
- Sugar: ½ tbsp
- Water (room temperature): 4–5 tbsp

Instructions
- Prepare Aromatics
Finely chop the scallion, ginger, and garlic. - Prepare the Prawns
- Clean the prawns by cutting off the feelers and removing the hard part of the head.
- Use scissors to cut along the back of each prawn and remove the black vein with a toothpick. Set the prawns aside.
- Mix the Sauce
In a bowl, combine 2 tbsp light soy sauce, 1 tbsp cooking wine, ½ tbsp dark soy sauce, 1 tbsp oyster sauce, ½ tbsp white vinegar, 1 tbsp tomato ketchup, ½ tbsp sugar, and 4–5 tbsp water. Mix well until the ingredients are fully combined. - Sauté the Aromatics
Heat a pan, add oil, and sauté the chopped scallion, ginger, and garlic until fragrant. - Cook the Prawns
Add the prawns to the pan and stir-fry until both sides turn red. - Braise the Prawns
Pour the prepared sauce over the prawns, making sure they are evenly coated. Cover the pan and let it simmer for about 2 minutes. - Reduce the Sauce
Remove the lid and cook over high heat to reduce the sauce until it thickens. - Serve
Plate the prawns and garnish with chopped scallions. - Delicious braised prawns in oil are ready to enjoy – Bon appétit!
