Braised Prawns in Oil 油焖大虾

Ingredients

  • Prawns: 500 g
  • Scallion: 1 stalk
  • Ginger: 2 slices
  • Garlic: 5–6 cloves
  • Light soy sauce: 2 tbsp
  • Cooking wine: 1 tbsp
  • Dark soy sauce: ½ tbsp
  • Oyster sauce: 1 tbsp
  • White vinegar: ½ tbsp
  • Tomato ketchup: 1 tbsp
  • Sugar: ½ tbsp
  • Water (room temperature): 4–5 tbsp

Instructions

  1. Prepare Aromatics
    Finely chop the scallion, ginger, and garlic.
  2. Prepare the Prawns
    1. Clean the prawns by cutting off the feelers and removing the hard part of the head.
    2. Use scissors to cut along the back of each prawn and remove the black vein with a toothpick. Set the prawns aside.
  3. Mix the Sauce
    In a bowl, combine 2 tbsp light soy sauce, 1 tbsp cooking wine, ½ tbsp dark soy sauce, 1 tbsp oyster sauce, ½ tbsp white vinegar, 1 tbsp tomato ketchup, ½ tbsp sugar, and 4–5 tbsp water. Mix well until the ingredients are fully combined.
  4. Sauté the Aromatics
    Heat a pan, add oil, and sauté the chopped scallion, ginger, and garlic until fragrant.
  5. Cook the Prawns
    Add the prawns to the pan and stir-fry until both sides turn red.
  6. Braise the Prawns
    Pour the prepared sauce over the prawns, making sure they are evenly coated. Cover the pan and let it simmer for about 2 minutes.
  7. Reduce the Sauce
    Remove the lid and cook over high heat to reduce the sauce until it thickens.
  8. Serve
    Plate the prawns and garnish with chopped scallions.
