Scallion Oil Noodles 葱油拌面

Ingredients
- ½ onion
- 5 small spring onions
- ½ large spring onion
- 400-500g fine noodles
- 6 tablespoons light soy sauce
- 2 tablespoons dark soy sauce
- 1 tablespoon white sugar

Instructions
- Preparation:
Finely chop garlic and spring onions. Prepare sesame seeds and set aside. - Make the Sauce:
In a bowl, add 6 tablespoons of light soy sauce, 2 tablespoons of dark soy sauce, and ½ tablespoon of white sugar. If you don’t like sweet dishes, you can omit the sugar. - Cook the Scallion Oil:
Make sure to dry the spring onion sections before adding them to the pan. Heat oil in a pan over high heat and sauté the spring onions and garlic until fragrant. - Add the Sauce:
Once the scallions and garlic are slightly browned, pour in the prepared sauce. - Simmer the Scallion Oil:
Reduce the heat to low and simmer the scallion oil for 1 minute, then remove from the heat. - Cook the Noodles:
Cook the noodles according to the package instructions, then drain and rinse under cold water. - Combine:
Add sesame seeds and mix the noodles with the scallion oil sauce. Serve and enjoy!
