Delicious Scallion Oil Noodles with Soy Sauce

Ingredients

  • ½ onion
  • 5 small spring onions
  • ½ large spring onion
  • 400-500g fine noodles
  • 6 tablespoons light soy sauce
  • 2 tablespoons dark soy sauce
  • 1 tablespoon white sugar

Instructions

  1. Preparation:
    Finely chop garlic and spring onions. Prepare sesame seeds and set aside.
  2. Make the Sauce:
    In a bowl, add 6 tablespoons of light soy sauce, 2 tablespoons of dark soy sauce, and ½ tablespoon of white sugar. If you don’t like sweet dishes, you can omit the sugar.
  3. Cook the Scallion Oil:
    Make sure to dry the spring onion sections before adding them to the pan. Heat oil in a pan over high heat and sauté the spring onions and garlic until fragrant.
  4. Add the Sauce:
    Once the scallions and garlic are slightly browned, pour in the prepared sauce.
  5. Simmer the Scallion Oil:
    Reduce the heat to low and simmer the scallion oil for 1 minute, then remove from the heat.
  6. Cook the Noodles:
    Cook the noodles according to the package instructions, then drain and rinse under cold water.
  7. Combine:
    Add sesame seeds and mix the noodles with the scallion oil sauce. Serve and enjoy!
