Sweet and Sour Pork Ribs 糖醋排骨

Ingredients
- Vinegar: 2 tbsp
- Light soy sauce: 2 tbsp
- Rock sugar: 10 g
- White sugar: 30 g
- Dark soy sauce: 0.5 tbsp
- Cooking wine: 1 tbsp
- White sesame seeds: 2 tsp
- Salt: 1 tsp
- Pork ribs: 500 g

Instructions
- Wash the pork ribs and cut them into pieces about 3 cm long. Place them in a pot of cold water, bring to a boil over high heat, then remove and rinse.
- Prepare the sauce: mix 1 tbsp cooking wine, 2 tbsp light soy sauce, 0.5 tbsp dark soy sauce, 2 tbsp vinegar, and 30 g sugar.
- Heat a pan with a bit of oil on low heat, add 10 g rock sugar, and stir until the sugar is completely melted.
- Add the blanched ribs and stir-fry until the ribs are slightly browned.
- Pour in the prepared sauce and stir-fry until the sauce thickens and coats the ribs well.
- Plate the ribs and sprinkle with sesame seeds.
