Ingredients
- Shiitake mushrooms: 5 pieces
- Bok choy: 5 heads
- Soy sauce: 1 tablespoon
- Oyster sauce: 1 tablespoon
- Salt: a pinch
- Green onion: 5 cm
- Garlic: 1 clove
Instructions
- Wash the bok choy and shiitake mushrooms.
- Separate the bok choy leaves, slice the shiitake mushrooms, chop the green onion, and mince the garlic.
- Blanch the bok choy in boiling water for 30 seconds, then drain.
- Shiitake mushrooms contain oxalic acid; blanch them in boiling water for 2 minutes and then drain.
- Heat oil to about 170℃, then sauté the green onion and garlic for 1–2 minutes until fragrant.
- Add the shiitake mushrooms and stir-fry for 1 minute.
- Toss in the bok choy and stir a few times. Add the soy sauce, oyster sauce, and salt.
- Mix well and serve immediately.
