Ingredients

  • Shiitake mushrooms: 5 pieces
  • Bok choy: 5 heads
  • Soy sauce: 1 tablespoon
  • Oyster sauce: 1 tablespoon
  • Salt: a pinch
  • Green onion: 5 cm
  • Garlic: 1 clove

Instructions

  • Wash the bok choy and shiitake mushrooms.
  • Separate the bok choy leaves, slice the shiitake mushrooms, chop the green onion, and mince the garlic.
  • Blanch the bok choy in boiling water for 30 seconds, then drain.
  • Shiitake mushrooms contain oxalic acid; blanch them in boiling water for 2 minutes and then drain.
  • Heat oil to about 170℃, then sauté the green onion and garlic for 1–2 minutes until fragrant.
  • Add the shiitake mushrooms and stir-fry for 1 minute.
  • Toss in the bok choy and stir a few times. Add the soy sauce, oyster sauce, and salt.
  • Mix well and serve immediately.
