Zucchini with Oyster Sauce (Vegan)

Ingredients

  • Zucchini: 1 piece
  • Oyster sauce: 2 tbsp
  • Spring onion: ⅓ stalk
  • Garlic: 2 cloves
  • Soy sauce: 1 tsp

Instructions

  1. Prepare the zucchini: Peel the zucchini and cut it into bite-sized diagonal chunks.
  2. Chop the onion and garlic: Finely chop the spring onion and garlic cloves.
  3. Sauté aromatics: Heat oil in a pan. Add the chopped spring onion and garlic, and sauté until fragrant.
  4. Add the zucchini: Toss in the zucchini and stir-fry evenly.
  5. Add soy sauce: Pour in 1 tsp soy sauce and mix well. Add 1 tbsp of water, cover the pan, and simmer for 1 minute.
  6. Add oyster sauce: Stir in 2 tbsp of oyster sauce and cook for another 30 seconds. The oyster sauce is flavorful enough, so no additional salt is needed.
  7. Serve: Remove from the pan and serve immediately.
