  • Potatoes: 2
  • Green beans: 250 g
  • Ginger: 5 slices
  • Spring onion: 1 small piece
  • Garlic: 1 clove
  • Sichuan peppercorns: 20
  • Star anise: 3
  • Light soy sauce: 1 tbsp
  • Dark soy sauce: 1 tbsp
  • Oyster sauce: 1 tbsp
  • Five-spice powder: 1 tsp

Instructions

  1. Choose two nice pieces of pork belly, wash them well, and cut them into small cubes. Soak them in water to remove blood and impurities.
  2. Wash the green beans and break them into approximately 3 cm long pieces. Peel the potatoes and cut them into chunks.
  3. Cut the spring onion into small pieces, slice the ginger and garlic, and set aside.
  4. Heat a wok, add cooking oil, and heat it to about 120°C. Add the pork belly pieces and stir-fry until they are browned and slightly crispy.
  5. Once the meat is lightly cooked and crispy, add the spring onion, ginger, Sichuan peppercorns, and star anise, and stir-fry for about 1 minute.
  6. Add the green beans to the wok and stir-fry on high heat for 3 minutes. Then add the potatoes and stir-fry for another minute.
  7. Add the light soy sauce, dark soy sauce, oyster sauce, and five-spice powder, and stir everything well.
  8. Add water to cover the ingredients, bring to a boil on high heat, then cover and simmer on low heat for about 30 minutes.
  9. Remove the lid and increase the heat to reduce the sauce until it thickens slightly.
  10. You can adjust the ratio of green beans, potatoes, and pork belly according to your taste.
