Spinach with Peanuts in Aged Vinegar (Vegan)

Ingredients

  • Spinach: 250 g
  • Peanuts: 100 g
  • Aged Chinese Vinegar (Chen Cu): 3 tbsp
  • Garlic: 3 cloves
  • Ginger: 2 slices
  • Salt: 2 tsp
  • Sugar: 2 tsp
  • Monosodium Glutamate (MSG): ½ tbsp

Instructions

  1. Prepare ingredients:
    • Finely chop the garlic and ginger into small pieces.
  2. Roast peanuts:
    • Place the peanuts in a cold pan with oil and fry over low heat until they change color and release a fragrant aroma.
    • Remove the peanuts from the pan, drain off excess oil, and let them cool until crispy.
  3. Blanch spinach:
    • Cut the spinach into sections.
    • Bring water to a boil, add the spinach, and blanch for 50 seconds. Then, transfer it to cold water to cool down and squeeze out excess water.
  4. Mix everything:
    • Place the spinach in a bowl and add the roasted peanuts, chopped garlic, ginger, sugar, salt, MSG, and 3 tbsp of aged vinegar.
    • Stir everything well to combine.
  5. Serve:
    • Serve immediately and enjoy!
