Cold Dressed Oyster Mushroom and Spinach Salad (Vegan)

Ingredients

  • Spinach: 1 handful
  • Oyster mushrooms: 500g
  • Small chili peppers: 2
  • Garlic: 3 cloves
  • Chili powder: 1 tablespoon
  • White sesame seeds: 1 tablespoon
  • Soy sauce: 3 tablespoons
  • Oyster sauce: 1 tablespoon
  • Sugar: ½ tablespoon
  • Vinegar: 1 tablespoon
  • Salt: ½ teaspoon
  • Cooking oil: 3 tablespoons

Instructions

  1. Finely chop the garlic and ginger into small pieces.
  2. Clean the oyster mushrooms and tear them into strips. Cut the spinach into small sections and mince the garlic.
  3. Boil the oyster mushrooms for 3 minutes, then rinse with cold water. Boil the spinach for 2 minutes and rinse with cold water.
  4. Prepare the sauce: combine chopped chili peppers, white sesame seeds, minced garlic, and chili powder. Heat the cooking oil to 200°C (392°F) and pour it over the mixture. Add soy sauce, oyster sauce, sugar, salt, and vinegar to the sauce.
  5. Pour the sauce over the spinach and oyster mushrooms, mix well.
  6. Serve immediately and enjoy!
