Cola Chicken Wings 可乐鸡翅

Ingredients
- Chicken wings: 12 pieces
- Cooking oil: 2 tablespoons
- Coca-Cola: 1 can
- Ginger: 3 slices
- Salt: About 1 gram
- Beer: 2 tablespoons
- Light soy sauce: 1 tablespoon
- Dark soy sauce: ½ tablespoon
- White sesame seeds: A small amount

Instructions
- Prepare the chicken wings: Wash the chicken wings and make two cuts on the back of each wing.
- Boil the chicken wings: Place the chicken wings in a pot of cold water with two slices of ginger. Bring to a boil over high heat.
- Slice the remaining ginger: Cut the remaining slice of ginger into thin strips.
- Blanch the chicken wings: Once the water boils, let the chicken wings cook for about 2 minutes. Remove, rinse, and set aside.
- Pan-fry the chicken wings: Heat a small amount of oil in a frying pan. Add the drained chicken wings and pan-fry until golden brown on both sides.
- Add aromatics and beer: Add the ginger strips and beer to the pan. Stir-fry until fragrant and the beer reduces slightly.
- Season with soy sauce: Add 1 tablespoon of light soy sauce and ½ tablespoon of dark soy sauce.
- Add cola: Pour in one can of Coca-Cola, bring to a boil, then reduce the heat to medium and cover the pan.
- Simmer: Let the wings simmer for 10–15 minutes until the liquid reduces by half. Add salt to taste.
- Thicken the sauce and garnish: Increase the heat to reduce the sauce further. Transfer the wings to a plate and sprinkle with toasted white sesame seeds.
