Stir-Fried Celery with Smoked Tofu (Vegan) 芹菜炒香干

Ingredients
- Smoked tofu: 2 pieces
- Light soy sauce: 1 tablespoon
- Celery: 1 bunch
- Spring onion: 1 small piece
- Salt: 1 teaspoon
- Dark soy sauce: ½ tablespoon
- Monosodium glutamate (MSG) (or vegetable broth): a pinch
- Ginger: 3 slices
- Cooking wine: 1 tablespoon
Instructions
- Prepare the celery
- Wash the celery and cut it diagonally into pieces.
- Blanch the celery briefly in boiling water, rinse under cold water, and drain.
- Cut the smoked tofu
- Cut the smoked tofu
- Slice the smoked tofu into strips and set aside.
- Prepare the aromatics
- Cut the spring onion and ginger into small pieces.
- Sauté the aromatics
- Heat some oil in a pan and stir-fry the spring onion and ginger until fragrant.
- Add the smoked tofu
- Add the smoked tofu to the pan, then stir in the light soy sauce and cooking wine. Stir-fry briefly.
- Add the celery and seasoning
- Add the prepared celery to the pan. Season with salt, dark soy sauce, and a pinch of Monosodium glutamate (MSG) (or vegetable broth). Stir-fry everything for about 1 minute.
- Once everything is evenly mixed, remove from the pan and serve.
