Ingredients

  • Green beans: 300 g
  • Lean pork: 100 g
  • Dried chili peppers: 5 pieces
  • Sichuan peppercorns: 10 pieces
  • Spicy peppercorns (Ma pepper): 10 pieces
  • Garlic: 2 cloves
  • Sugar: 1 tsp
  • Salt: 1 tsp
  • Soy sauce: 2 tbsp
  • Rice wine: 2 tbsp
  • Monosodium glutamate (MSG): 2 g

Instructions

  1. Preparation:
    • Wash the green beans, trim the ends, and cut them into sections.
    • Mince the garlic and cut the dried chili peppers into small pieces.
  2. Frying the Beans:
    1. Add a generous amount of oil to a pan and heat it to about 180°C (around medium-high heat).
    2. Fry the green beans over medium heat until the skins wrinkle and they start to change color. Remove and set aside to drain off excess oil.
    3. Fry until the skins are wrinkled for the best texture.
  3. Cooking the Spices:
    1. Leave a little oil in the pan, add the minced pork, and stir-fry until it’s crispy.
    2. Lower the heat, add the Sichuan peppercorns, Ma pepper, and dried chili pieces, then add the minced garlic and cook until fragrant.
  4. Finishing the Beans:
    • Add the fried green beans back into the pan, then season with soy sauce, salt, rice wine, and sugar.
    • Stir-fry quickly until everything is well coated, then serve hot.
