Ingredients
- Green beans: 300 g
- Lean pork: 100 g
- Dried chili peppers: 5 pieces
- Sichuan peppercorns: 10 pieces
- Spicy peppercorns (Ma pepper): 10 pieces
- Garlic: 2 cloves
- Sugar: 1 tsp
- Salt: 1 tsp
- Soy sauce: 2 tbsp
- Rice wine: 2 tbsp
- Monosodium glutamate (MSG): 2 g
Instructions
- Preparation:
- Wash the green beans, trim the ends, and cut them into sections.
- Mince the garlic and cut the dried chili peppers into small pieces.
- Frying the Beans:
- Add a generous amount of oil to a pan and heat it to about 180°C (around medium-high heat).
- Fry the green beans over medium heat until the skins wrinkle and they start to change color. Remove and set aside to drain off excess oil.
- Fry until the skins are wrinkled for the best texture.
- Cooking the Spices:
- Leave a little oil in the pan, add the minced pork, and stir-fry until it’s crispy.
- Lower the heat, add the Sichuan peppercorns, Ma pepper, and dried chili pieces, then add the minced garlic and cook until fragrant.
- Finishing the Beans:
- Add the fried green beans back into the pan, then season with soy sauce, salt, rice wine, and sugar.
- Stir-fry quickly until everything is well coated, then serve hot.
