Stir-Fried Oyster Mushrooms 清炒平菇

Ingredients
- Green onions: 2 stalks
- Oyster mushrooms: 700 g
- Salt: 1 teaspoon
- Monosodium glutamate (MSG): ½ teaspoon
- Oyster sauce: 1 tablespoon
- Soy sauce: 2 tablespoons
- Dried chili peppers: 2 (optional)
- Ginger (minced): 2 slices
- Garlic (minced): 1 clove
- Cooking oil: 5 tablespoons
Instructions
- Wash the oyster mushrooms and tear them into evenly sized strips.
- Bring a pot of water to a boil, blanch the oyster mushrooms for 1 minute, then drain and rinse them with cold water. Squeeze out any excess water.
- Mince the ginger and garlic, and cut the dried chilies into small pieces (optional, if you want it spicy). Cut the green onions into sections; you can also skip this or substitute with chives if preferred.
- Heat a wok or pan, add the cooking oil, then add the minced ginger, garlic, and dried chilies, and stir-fry until fragrant.
- Add the oyster mushrooms and stir-fry for about 1 minute. Season with salt, soy sauce, oyster sauce, and Monosodium glutamate (MSG).
- Add the green onions and stir-fry briefly until fragrant.
- Serve and enjoy!
