Green Beans with Sesame Paste Dressing (Vegan)

Ingredients

  • Green beans: 300 g
  • Sesame paste: 3 tbsp
  • Garlic: 5 cloves
  • Soy sauce: 1 tbsp
  • Rice vinegar: ½ tbsp
  • Salt: 2 g
  • Sugar: ½ tsp

Instructions

  1. Wash the green beans, drain, and break them into pieces about 3 cm long.
  2. Mince the garlic.
  3. Bring a pot of water to a boil, add a spoonful of salt and a few drops of vegetable oil, then add the green beans. Blanch the beans in boiling water for about 5 minutes (the salt and oil help keep the beans bright green, and 5 minutes ensures they are tender yet crisp and cooked through—undercooked beans can be toxic).
  4. Remove the blanched beans and rinse them in cold water several times to make them crunchy and keep their green color. Drain, arrange on a plate, and sprinkle with a bit of minced garlic.
  5. Prepare the Sesame Paste Dressing:
  6. In a small bowl, mix 3-4 tablespoons of sesame paste, ½ teaspoon of sugar, 1 tablespoon of soy sauce, 1 tablespoon of rice vinegar, and a pinch of salt. Gradually add a small amount of cool boiled water, stirring well. The water should be added gradually, as the sesame paste will initially become thick and sticky. Continue adding water and stirring until the dressing becomes smooth and slightly thick.
  7. Pour the sesame paste dressing evenly over the green beans. The vibrant green beans will be coated in the rich, aromatic sesame dressing, giving them a crispy and flavorful taste. (Alternatively, serve the dressing in a small bowl on the side, with some minced garlic if desired. The beans can be dipped into the dressing directly if preferred.)
